    For most of us, this has been an incredibly long and cold winter and we’re all feeling like we deserve some nice spring weather. What better way to ring in the season than with some fun and festive Easter ideas?  Even the simplest splash of color or décor touch can help you bring the feel of spring into your home. Then take your holiday entertaining from average to amazing with the perfect Easter menu.

     

    Spectacular Springtime Tables

    From classic to cute, these decorating tips will help you add just a touch of special to your table.

    Tabletop

    • Decorate a simple white or pale yellow tablecloth with small terracotta pots of individual hyacinth plants lined down the center of your table.
    • Scatter silk flower petals down the middle of your table and set small clear votives on and around them for an elegant hint of spring.
    • Put a “runner” of moss down the center of your table, intertwine silk flowers and votive candles on top of the moss; it’s a tabletop garden!
    • Place small, shiny eggs and a few pale feathers in a clump of moss and then nestle into a small bird's nest; set each nest in a corner of your table.

     

    Place settings

    • Create unique decorative place cards using candy “Peeps” (marshmallow chicks and bunnies) or small chocolate bunnies. Cut a small slit in the top to hold the place card. This is a perfect craft for getting the kids involved.
    • Punch a hole through the corner of a pretty packet of flower seeds, then thread a small ribbon through the hole and tie on a tag with each guest’s name to create living place cards.

    • Cut tall branches from trees and shrubs in your yard—such as forsythia and cherry blossoms—and display them indoors in a clear or decorative vase. They’ll look beautiful on a buffet or side table.
    • Fill clear glass jars of varying shapes and sizes with one color of jelly beans (one jar of pink, one jar of yellow, etc.).  Set this colorful display on a mantle or a large windowsill. 
    • Cover the base of a large, cylindrical basket by hot gluing lots of silk roses on it. Then wrap the basket’s handle in satin ribbon and secure it at each handle base. Use this on a buffet to hold napkin-wrapped silverware or line the basket with a cloth napkin and fill it with different breads.
    • Fill lots of clear glass vases with as many tulips or daffodils as they will hold, cut the stems the same length and twist them ever so slightly before putting them in the vase for added visual interest.
    • Set topiaries around your home, fill the bases with moss and scatter in small, shiny chocolate eggs for some extra Easter décor.

    Easter Brunch Buffet: A Quiche Medley

    Quiches are a great choice for busy people. Prepare them ahead of time and pop them in the oven as your guests arrive. Then you get to enjoy spending time with friends and family instead of working away in the kitchen! Choose your favorites and try these tasty combinations:

    • Spinach, ricotta and prosciutto quiche
    • Shrimp and asparagus quiche
    • Mushroom and caramelized onion quiche
    • Medley of fresh fruit and berries
    • Sour cream coffee cake
    • Tower of cupcakes with lavender infused frosting,
    • Blood orange bellinis and rose petal fizzes

    Traditional Easter Lunch: Southern and Savory

    Growing up in the South, I always remember having ham on Easter—it’s easy to make and becomes a wonderful family tradition. This meal can also be served buffet style for the ease of the host and it helps create a wonderful feeling of family.

    • Baked ham with a brown sugar, clove and pineapple glaze
    • Crème fraiche deviled eggs
    • Puree of sweet potato and carrot
    • Roasted new potatoes with thyme
    • Sautéed baby peas with lemon and scallions
    • Buttermilk biscuits
    • Dry Rose’ wine and mint iced tea

    Elegant Easter Dinner: First Offerings of Spring

    This is a menu full of all the wonderful tastes spring has to offer: lusty lamb, rosemary, bright lemon and crisp asparagus. I also favor, after a day of eating chocolate, a cheese course at the end of the meal. It’s a rich, elegant take on Easter…the perfect evening to share with close family and friends.

    • Roast leg of lamb with garlic, rosemary and herbs
    • Lemon risotto with peas, shaved sautéed asparagus topped with shaved pecorino cheese
    • Individual Meyer lemon soufflés baked in their own lemon “shells”
    • Final cheese course with spring goat cheese, blue and St. Andre
    • Big, full-bodied red wine

     

    An Extra Special Touch             

    • Use edible flowers as a garnish on salads, main dishes and desserts. Try crystallizing violets with an egg white wash and dipping them in extra-fine granulated sugar, then use them to decorate a white layer cake or cupcakes with white or lavender frosting.
